The Florida stone crab is found in the western North Atlantic and has tender, low-fat meat. Stone crabs are a sustainable item, as harvesters remove a single claw from the animal, which grows back quickly. The top buyer of stone crabs is Joe’s Stone Crab, a restaurant in Miami Beach that opened in 1913. Soon after its opening, it became well-known for its stone crab dishes.
